Ingredients
1 1/2 tbsp butter
4 beaten eggs
1 1/2 cups chopped fresh spinach
Salt and pepper
Sliced avocado
Tomato salsa or salsa verde

Directions
1. Melt 1 1/2 Tbsp butter in a nonstick skillet on medium heat.

2. Stir in 4 beaten eggs and 1 1/2 cups of chopped fresh spinach; add salt and pepper.

3. Cook, stirring, until the eggs are softly scrambled, about 2 minutes. Wrap the eggs in warm corn tortillas.

4. Top with sliced avocado and tomato salsa or salsa verde.
