Grilled Fruit with Berry Sauce

Serve up this refreshing dessert treat of grilled fruit drizzled with berry sauce for a guaranteed hit.

Ingredients

  • 1 cup fresh raspberries
  • 2 tsps lemon juice
  • 2 tbsps packed brown sugar
  • 2 medium fresh apricots, halved and pitted
  • 2 medium fresh plums, halved and pitted
  • 1 medium fresh peach, halved and pitted
  • 1 tsp olive oil
  • 2 tsps honey

Directions

1. In a blender or food processor, combine the raspberries, 1 1/2 teaspoons of the lemon juice and 1 tablespoon of the brown sugar; puree. With a spatula, push the sauce through a sieve into a bowl to strain out the seeds. Add more lemon juice or brown sugar to taste, if desired.

2. Preheat the grill. Brush the cut sides of the apricot, plum and peach halves with the oil. Grill the fruit, oiled side down, for 2 to 3 minutes, or until lightly browned. Remove from the grill. While the fruit is still hot, drizzle it with the honey. Arrange the fruit on 4 dessert plates and top with the raspberry sauce.
