Red Pepper Ricotta Bruschetta

Ingredients:

  • 8 slices (3/4 inch) crusty french bread
  • 1/2 cup light ricotta cheese
  • 2 tablespoons mayonnaise
  • 2 tablespoons plain yogurt
  • 2 tablespoons grated Parmesan cheese
  • 1/2 cup roasted sweet red peppers
     

1. Toast the bread.

2. In a blender or bowl, combine the ricotta, mayonnaise, yogurt, and Parmesan until smooth.

3. Spread on the toasted bread.

4. Top each bruschetta with red peppers.
