Classic oregano belongs to a big, wide-ranging family of herbs. Both seeds and plants sold as oregano are often the more generic Origanum vulgare, which might not have the flavor you need to spice up your pizza.

To achieve the flavor you crave, start with a plant of the desired species. The oregano you want is O. heracleoticum (sometimes called O. hirtum or O. vulgare subsp. hirtum). But be careful—all the oreganos cross-pollinate readily, and seeds may not produce a plant with the kind of oregano flavor you desire.
