Many plants store energy for next year's growth in tubers and rhizomes. The following plants can be stored over the winter in the same manner: Dahlia spp. Elephant's Ear (Alocasia spp.) Ornamental Sweet Potato (Ipomoea batatas) Taro (Colocasia spp.) Tuberous begonia Gather Tubers, Bulbs, and Rhizomes. Dig them up with a fork, taking care not to puncture. Choose several large, undamaged tubers, bulbs, or rhizomes for storage. Store well. Allow to air dry in a shaded, sheltered area for a few hours. Then brush off excess soil and store in a box or mesh bag between layers of peat moss. Place the box/bag in a dark, cool (45-50 degrees F), well-ventilated place. Check in. Examine once a month and discard any rotting tubers, bulbs, or rhizomes.
