Pita rounds make perfect instant pizza crusts. The feta cheese, spinach, and olives give these pizzas Greek flair.
2 whole wheat pitas (6" diameter)
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/2 cup shredded mozzarella cheese
1/4 cup crumbled feta cheese
1/4 cup sliced black olives
1 tomato, diced
1/4 cup thinly sliced red onion
There are many types of feta cheese sold in the supermarket, ranging from mild to very salty. We prefer salty Greek feta for this recipe.
1. Preheat the oven to 400°F.
2. Prick the pitas several times with a fork. Spread the spinach over the pitas. Sprinkle each with the mozzarella, feta, olives, tomato, and onion. Place the pitas on a baking sheet and bake for 10 minutes.
3. To serve, cut each pizza into 8 slices.
